 500 g Prime Ribeye (bone in)
 4 tbsp Low & Slow 101 Black Bessie Rub

Heat oven, BBQ or smoker to 110c or 230f

Generously pat Black Bessie rub onto ribeye and set aside to rest for 10 mins

Cooking

Place ribeye in oven/bbq and slowly cook until desired done-ness below using a meat probe:

• Rare – 40c (110f)
• Medium Rare – 46c (115f)
• Medium – 52c (125f)
• Medium Well – 57c (135f)

Once desired internal temperature is reached, remove from heat and leave to rest for approximately 10mins

Place ribeye either over a hot pan or over coals (direct heat) for approximately 90sec either side. Cut and serve immediately.
