 1.50 kg Lamb Roast, fat slightly trimmed
 500 g Roasting potatoes
 6 tbsp Low & Slow 101 Little Bo Peep Rub
 6 tbsp Low & Slow 101 Cluckin' Good Rub
 4 tbsp Olive oil or butter
 1 tbsp Fresh minced garlic

Potato Preparation

Peel potatoes and cut into quarters

Coat potatoes in olive oil

Roll potatoes in minced garlic

Lay potatoes in baking pan and sprinkle Cluckin' Good rub over to coat

Lamb Preparation

Heat over or smoker to 200c

Having trimmed fat from lamb slightly, rub Little Bo Peep lamb rub generously over meat.

Place lamb with potatoes and cook at this temperature for approximately 20 minutes

Reduce heat to 180c and roast lamb and potatoes, basting with pan juices every 20mins until the internal temperature of the lamb is at approximately 140f (medium rare-medium)

Remove lamb from smoker/oven and let rest. Check to see if potatoes are soft, if not, wrap lamb loosely.

Once potatoes are soft, remove from oven and plate with sliced lamb to serve. Drizzle with pan juices.
