 3 kg Pork 'Butt' or shoulder (skin off)
 150 g Low & Slow 101 Sweet Swine O' Mine Rub
 250 ml Your Favourite BBQ Sauce

Preparation
1

Have your smoker/oven run to a temperature of 230f

Remove all skin if the cut you have purchased has it on.

Generously sprinkle Sweet Swine 'O' Mine rub to cover the entire cut of meat.

Cooking

Insert meat probe to centre of cut, taking care not to touch any bones.

Cooking at 230f, run the cut of meat until an internal temperature is reached of 160f.

Remove cut of meat from smoker and fully wrap in alfoil then return to smoker/oven.

7

Cook until meat probes at 203-205f or until it probes like butter.

Holding

It is important to remove the cut of meat, wrap in a towel and then into an esky for upto 4hrs as a whole cut.

Serving

Remove cut of meat from foil then onto large tray. Using 2 x forks, break meat apart and remove any bone/s. Add your favourite BBQ sauce as desired.
